Ingredients

  • Bell Pepper - 1 medium, cut into chunks
  • Zucchini - 1 medium, sliced into thick rounds
  • Mushrooms - 200 grams, whole or halved if large
  • Cherry Tomatoes - 150 grams, whole
  • Red Onion - 1 medium, cut into wedges
  • Olive Oil - 3 tablespoons
  • Lemon Juice - 2 tablespoons
  • Garlic - 2 cloves, minced
  • Paprika - 1 teaspoon
  • Cumin - 1 teaspoon
  • Salt - 1 teaspoon
  • Black Pepper - 1/2 teaspoon
  • Fresh Parsley - for garnish

Steps

  1. In a large bowl, combine olive oil, lemon juice, minced garlic, paprika, cumin, salt, and black pepper to create the marinade.
  2. Add the bell pepper, zucchini, mushrooms, cherry tomatoes, and red onion to the marinade, tossing to coat all the vegetables evenly. Let them marinate for at least 15 minutes.
  3. While the vegetables are marinating, soak wooden skewers in water for 10-15 minutes to prevent burning during grilling.
  4. Preheat the grill or BBQ to medium-high heat.
  5. Thread the marinated vegetables onto the soaked skewers, alternating between different types of vegetables for a colorful presentation.
  6. Place the skewers on the grill and cook for 10-15 minutes, turning occasionally until the vegetables are tender and lightly charred.
  7. Remove from the grill and let cool for a minute. Garnish with fresh parsley before serving.
