- Carrot - 1 medium, diced
- Green bell pepper - 1 medium, diced
- Zucchini - 1 medium, diced
- Eggplant - 1 small, diced
- Tomato - 2 medium, diced
- Potato - 1 medium, diced
- Vegetable broth - 300 ml
- Tomato paste - 1 tablespoon
- Dried thyme - 1 teaspoon
- Dried oregano - 1 teaspoon
- Salt - to taste
- Black pepper - to taste
- Fresh parsley - for garnish
Steps
- Heat the olive oil in a large pot over medium heat.
- Add the chopped onion and garlic, sautéing until the onion becomes translucent.
- Stir in the diced carrot, green bell pepper, zucchini, eggplant, and potato. Cook for about 5-7 minutes until the vegetables start to soften.
- Add the diced tomatoes, vegetable broth, tomato paste, dried thyme, and dried oregano. Stir well to combine.
- Season with salt and black pepper to taste. Bring the mixture to a simmer.
- Cover the pot and reduce the heat to low. Let it cook for about 20-25 minutes, or until all the vegetables are tender.
- Once cooked, remove from heat and let it sit for a few minutes.
- Serve hot, garnished with fresh parsley.
