  • Carrot - 1 medium, diced
  • Green bell pepper - 1 medium, diced
  • Zucchini - 1 medium, diced
  • Eggplant - 1 small, diced
  • Tomato - 2 medium, diced
  • Potato - 1 medium, diced
  • Vegetable broth - 300 ml
  • Tomato paste - 1 tablespoon
  • Dried thyme - 1 teaspoon
  • Dried oregano - 1 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Fresh parsley - for garnish

Steps

  1. Heat the olive oil in a large pot over medium heat.
  2. Add the chopped onion and garlic, sautéing until the onion becomes translucent.
  3. Stir in the diced carrot, green bell pepper, zucchini, eggplant, and potato. Cook for about 5-7 minutes until the vegetables start to soften.
  4. Add the diced tomatoes, vegetable broth, tomato paste, dried thyme, and dried oregano. Stir well to combine.
  5. Season with salt and black pepper to taste. Bring the mixture to a simmer.
  6. Cover the pot and reduce the heat to low. Let it cook for about 20-25 minutes, or until all the vegetables are tender.
  7. Once cooked, remove from heat and let it sit for a few minutes.
  8. Serve hot, garnished with fresh parsley.
