Ingredients

  • Sardines - 400 grams, cleaned and filleted
  • All-purpose flour - 100 grams
  • Semolina - 50 grams
  • Olive oil - 4 tablespoons
  • Lemon - 1, juiced
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Fresh parsley - 2 tablespoons, chopped
  • Garlic - 1 clove, minced

Steps

  1. Rinse the sardine fillets under cold water and pat them dry with paper towels.
  2. In a shallow bowl, mix the all-purpose flour, semolina, salt, and black pepper.
  3. Dredge each sardine fillet in the flour mixture, ensuring they are well coated.
  4. Heat 2 tablespoons of olive oil in a large skillet over medium heat.
  5. Once the oil is hot, add half of the sardine fillets to the skillet, cooking for about 3-4 minutes on each side until golden brown and crispy.
  6. Remove the sardines from the skillet and place them on a paper towel-lined plate to drain excess oil. Add the remaining olive oil to the skillet and repeat with the second batch of sardines.
  7. In a small bowl, combine the lemon juice, minced garlic, and chopped parsley. Mix well.
  8. Serve the sardines hot, drizzled with the lemon-garlic-parsley sauce.
