- All-purpose flour - 200 grams
- Warm water - 100 ml
- Active dry yeast - 5 grams
- Sugar - 10 grams
- Salt - 5 grams
- Olive oil - 30 ml
- Ground cinnamon - 1 teaspoon
- Ground walnuts - 50 grams
- Honey - 15 grams
- Sesame seeds - 10 grams
Steps
- In a small bowl, dissolve the active dry yeast and sugar in warm water. Let it sit for about 10 minutes until frothy.
- In a mixing bowl, combine the all-purpose flour and salt. Make a well in the center and add the yeast mixture and olive oil.
- Knead the mixture until a smooth dough forms, about 8-10 minutes. Cover with a damp cloth and let it rise in a warm place for 30 minutes or until doubled in size.
- Meanwhile, mix ground walnuts, ground cinnamon, and honey in a bowl to create the filling.
- Once the dough has risen, punch it down and roll it out into a rectangle about 1 cm thick.
- Spread the walnut filling evenly over the dough, then roll it tightly into a log.
- Cut the log into 6 equal pieces and place them on a baking sheet lined with parchment paper. Press each piece down slightly.
- Sprinkle sesame seeds on top and let them rise for another 10 minutes.
- Preheat the oven to 180°C (350°F) and bake the çörek for about 20-25 minutes or until golden brown.
- Remove from the oven and let cool slightly before serving.
