Ingredients

  • All-purpose flour - 200 grams
  • Warm water - 100 ml
  • Active dry yeast - 5 grams
  • Sugar - 10 grams
  • Salt - 5 grams
  • Olive oil - 30 ml
  • Ground cinnamon - 1 teaspoon
  • Ground walnuts - 50 grams
  • Honey - 15 grams
  • Sesame seeds - 10 grams

Steps

  1. In a small bowl, dissolve the active dry yeast and sugar in warm water. Let it sit for about 10 minutes until frothy.
  2. In a mixing bowl, combine the all-purpose flour and salt. Make a well in the center and add the yeast mixture and olive oil.
  3. Knead the mixture until a smooth dough forms, about 8-10 minutes. Cover with a damp cloth and let it rise in a warm place for 30 minutes or until doubled in size.
  4. Meanwhile, mix ground walnuts, ground cinnamon, and honey in a bowl to create the filling.
  5. Once the dough has risen, punch it down and roll it out into a rectangle about 1 cm thick.
  6. Spread the walnut filling evenly over the dough, then roll it tightly into a log.
  7. Cut the log into 6 equal pieces and place them on a baking sheet lined with parchment paper. Press each piece down slightly.
  8. Sprinkle sesame seeds on top and let them rise for another 10 minutes.
  9. Preheat the oven to 180°C (350°F) and bake the çörek for about 20-25 minutes or until golden brown.
  10. Remove from the oven and let cool slightly before serving.
