- Brown rice - 150 grams
- Chicken breast - 200 grams, diced
- Olive oil - 2 tablespoons
- Onion - 1 medium, finely chopped
- Carrot - 1 medium, diced
- Bell pepper - 1 medium, diced
- Garlic - 2 cloves, minced
- Vegetable broth - 400 milliliters
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Paprika - 1/2 teaspoon
- Fresh parsley - 2 tablespoons, chopped
Steps
- Rinse the brown rice under cold water until the water runs clear, then drain and set aside.
- In a medium pot, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
- Add the minced garlic, diced carrot, and bell pepper to the pot. Cook for an additional 5 minutes until the vegetables are tender.
- Stir in the diced chicken breast and cook until browned on all sides, about 5-7 minutes.
- Add the rinsed brown rice, vegetable broth, salt, black pepper, and paprika to the pot. Stir to combine.
- Bring the mixture to a boil, then reduce the heat to low, cover, and simmer for 25 minutes or until the rice is cooked and liquid is absorbed.
- Once cooked, remove from heat and let it sit covered for 5 minutes. Fluff with a fork and stir in the chopped parsley before serving.
