Ingredients

  • Brown rice - 150 grams
  • Chicken breast - 200 grams, diced
  • Olive oil - 2 tablespoons
  • Onion - 1 medium, finely chopped
  • Carrot - 1 medium, diced
  • Bell pepper - 1 medium, diced
  • Garlic - 2 cloves, minced
  • Vegetable broth - 400 milliliters
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Paprika - 1/2 teaspoon
  • Fresh parsley - 2 tablespoons, chopped

Steps

  1. Rinse the brown rice under cold water until the water runs clear, then drain and set aside.
  2. In a medium pot, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
  3. Add the minced garlic, diced carrot, and bell pepper to the pot. Cook for an additional 5 minutes until the vegetables are tender.
  4. Stir in the diced chicken breast and cook until browned on all sides, about 5-7 minutes.
  5. Add the rinsed brown rice, vegetable broth, salt, black pepper, and paprika to the pot. Stir to combine.
  6. Bring the mixture to a boil, then reduce the heat to low, cover, and simmer for 25 minutes or until the rice is cooked and liquid is absorbed.
  7. Once cooked, remove from heat and let it sit covered for 5 minutes. Fluff with a fork and stir in the chopped parsley before serving.
