Ingredients
- All-purpose flour - 200 grams
- Water - 100 ml
- Salt - 1 teaspoon
- Ground lamb or beef - 150 grams
- Onion - 1 small, finely chopped
- Garlic - 1 clove, minced
- Black pepper - 1/2 teaspoon
- Paprika - 1/2 teaspoon
- Yogurt - 150 grams
- Butter - 30 grams
- Dried mint - 1 teaspoon
- Red pepper flakes - 1/2 teaspoon
- Salt - to taste
Steps
- In a mixing bowl, combine flour, water, and 1 teaspoon of salt to form a dough. Knead until smooth, then cover and let it rest for 30 minutes.
- In another bowl, mix the ground meat, chopped onion, minced garlic, black pepper, and paprika until well combined.
- Roll out the rested dough on a floured surface to about 2 mm thickness. Cut into 5 cm squares.
- Place a small spoonful of the meat mixture in the center of each square. Fold the corners to the center and pinch to seal, forming a dumpling.
- Bring a pot of salted water to a boil. Cook the dumplings in batches for about 5-7 minutes or until they float to the surface.
- In a small saucepan, melt the butter over medium heat. Add dried mint and red pepper flakes, and sauté for 1-2 minutes until fragrant.
- In a serving dish, place the cooked dumplings and drizzle with the yogurt. Top with the melted butter mixture and additional red pepper flakes if desired.
