Ingredients

  • All-purpose flour - 200 grams
  • Water - 100 ml
  • Salt - 1 teaspoon
  • Ground lamb or beef - 150 grams
  • Onion - 1 small, finely chopped
  • Garlic - 1 clove, minced
  • Black pepper - 1/2 teaspoon
  • Paprika - 1/2 teaspoon
  • Yogurt - 150 grams
  • Butter - 30 grams
  • Dried mint - 1 teaspoon
  • Red pepper flakes - 1/2 teaspoon
  • Salt - to taste

Steps

  1. In a mixing bowl, combine flour, water, and 1 teaspoon of salt to form a dough. Knead until smooth, then cover and let it rest for 30 minutes.
  2. In another bowl, mix the ground meat, chopped onion, minced garlic, black pepper, and paprika until well combined.
  3. Roll out the rested dough on a floured surface to about 2 mm thickness. Cut into 5 cm squares.
  4. Place a small spoonful of the meat mixture in the center of each square. Fold the corners to the center and pinch to seal, forming a dumpling.
  5. Bring a pot of salted water to a boil. Cook the dumplings in batches for about 5-7 minutes or until they float to the surface.
  6. In a small saucepan, melt the butter over medium heat. Add dried mint and red pepper flakes, and sauté for 1-2 minutes until fragrant.
  7. In a serving dish, place the cooked dumplings and drizzle with the yogurt. Top with the melted butter mixture and additional red pepper flakes if desired.
