Ingredients

  • Large potatoes - 2
  • Canned black beans - 100 grams, drained and rinsed
  • Greek yogurt - 100 grams
  • Cheddar cheese, shredded - 50 grams
  • Olive oil - 1 tablespoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Paprika - 1/2 teaspoon
  • Chopped green onions - 2 tablespoons
  • Corn kernels - 50 grams (fresh or canned)
  • Sliced olives - 30 grams

Steps

  1. Preheat the oven to 200°C (400°F).
  2. Wash the potatoes thoroughly and prick them a few times with a fork.
  3. Wrap each potato in aluminum foil and place them directly on the oven rack.
  4. Bake the potatoes for about 45-50 minutes, or until tender when pierced with a fork.
  5. While the potatoes are baking, prepare the filling. In a bowl, combine the black beans, Greek yogurt, shredded cheddar cheese, olive oil, salt, black pepper, paprika, green onions, and corn. Mix well.
  6. Once the potatoes are cooked, remove them from the oven and let them cool slightly.
  7. Unwrap the potatoes and cut them open lengthwise, fluffing the insides with a fork.
  8. Spoon the high-protein filling generously into each potato.
  9. Top with sliced olives and any extra cheese if desired.
