- Large potatoes - 2
- Canned black beans - 100 grams, drained and rinsed
- Greek yogurt - 100 grams
- Cheddar cheese, shredded - 50 grams
- Olive oil - 1 tablespoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Paprika - 1/2 teaspoon
- Chopped green onions - 2 tablespoons
- Corn kernels - 50 grams (fresh or canned)
- Sliced olives - 30 grams
Steps
- Preheat the oven to 200°C (400°F).
- Wash the potatoes thoroughly and prick them a few times with a fork.
- Wrap each potato in aluminum foil and place them directly on the oven rack.
- Bake the potatoes for about 45-50 minutes, or until tender when pierced with a fork.
- While the potatoes are baking, prepare the filling. In a bowl, combine the black beans, Greek yogurt, shredded cheddar cheese, olive oil, salt, black pepper, paprika, green onions, and corn. Mix well.
- Once the potatoes are cooked, remove them from the oven and let them cool slightly.
- Unwrap the potatoes and cut them open lengthwise, fluffing the insides with a fork.
- Spoon the high-protein filling generously into each potato.
- Top with sliced olives and any extra cheese if desired.
