Ingredients

  • Lamb shoulder - 300 grams, cut into 2.5 cm cubes
  • Yogurt - 100 grams
  • Olive oil - 2 tablespoons
  • Garlic - 2 cloves, minced
  • Ground cumin - 1 teaspoon
  • Ground black pepper - 1 teaspoon
  • Paprika - 1 teaspoon
  • Salt - 1 teaspoon
  • Lemon juice - 1 tablespoon
  • Red bell pepper - 1, cut into 2.5 cm pieces
  • Onion - 1 medium, quartered
  • Tomato - 1 medium, chopped
  • Fresh parsley - for garnish

Steps

  1. In a bowl, combine yogurt, olive oil, minced garlic, ground cumin, black pepper, paprika, salt, and lemon juice to create a marinade.
  2. Add the lamb cubes to the marinade, ensuring they are well-coated. Cover and let marinate for at least 30 minutes, preferably in the refrigerator.
  3. Preheat a grill or grill pan over medium-high heat.
  4. Thread the marinated lamb, red bell pepper, and onion onto skewers, alternating between the meat and vegetables.
  5. Grill the skewers for about 10-12 minutes, turning occasionally, until the lamb is cooked to your desired doneness and has a nice char.
  6. In a small saucepan, sauté the chopped tomato in a little olive oil until softened, about 5 minutes. Season with salt and pepper.
  7. Serve the kebabs hot, drizzled with the tomato sauce and garnished with fresh parsley.
