Ingredients

  • Yufka (Turkish flatbread) - 4 sheets
  • Fresh spinach - 200 grams, chopped
  • Feta cheese - 100 grams, crumbled
  • Onion - 1 small, finely chopped
  • Olive oil - 2 tablespoons
  • Black pepper - 1/2 teaspoon
  • Salt - 1/4 teaspoon
  • Sesame seeds - 1 tablespoon (optional)

Steps

  1. Preheat the oven to 180°C (350°F).
  2. In a skillet, heat 1 tablespoon of olive oil over medium heat and sauté the chopped onion until translucent, about 5 minutes.
  3. Add the chopped spinach to the skillet and cook until wilted, about 3-4 minutes. Remove from heat and let it cool slightly.
  4. In a mixing bowl, combine the sautéed spinach and onion with crumbled feta cheese, black pepper, and salt. Mix well.
  5. Lay one sheet of yufka on a clean surface and brush it lightly with olive oil. Place another sheet on top and brush again.
  6. Spoon some of the spinach and feta mixture along one edge of the yufka and roll it up tightly. Shape it into a spiral or coil and place it on a baking sheet lined with parchment paper.
  7. Repeat with the remaining yufka sheets and filling mixture.
  8. Brush the tops of the rolled börek with a little more olive oil and sprinkle sesame seeds on top if desired.
  9. Bake in the preheated oven for 25-30 minutes, or until golden brown and crispy.
  10. Remove from the oven and let cool for a few minutes before serving.
