Ingredients

  • Basmati rice - 150 grams
  • Water - 400 ml
  • Olive oil - 2 tablespoons
  • Onion - 1 small, finely chopped
  • Carrot - 1 medium, diced
  • Bell pepper - 1/2, diced
  • Garlic - 2 cloves, minced
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Turmeric - 1/2 teaspoon
  • Cinnamon - 1/4 teaspoon
  • Bay leaf - 1
  • Pine nuts - 30 grams, toasted
  • Fresh parsley - 2 tablespoons, chopped (for garnish)

Steps

  1. Rinse the basmati rice under cold water until the water runs clear, then soak it in warm water for 20 minutes.
  2. In a pot, heat the olive oil over medium heat and sauté the chopped onion until translucent.
  3. Add the diced carrot and bell pepper to the pot, cooking for an additional 5 minutes until they soften.
  4. Stir in the minced garlic, salt, black pepper, turmeric, cinnamon, and the bay leaf, cooking for another minute until fragrant.
  5. Drain the soaked rice and add it to the pot, stirring to coat the rice with the oil and spices.
  6. Pour in the water, bring to a boil, then reduce the heat to low, cover the pot, and simmer for 15 minutes or until the rice is cooked and the water is absorbed.
  7. Once cooked, remove from heat and let it sit for 5 minutes covered, then fluff the rice with a fork.
  8. Stir in the toasted pine nuts and garnish with chopped parsley before serving.
