- Basmati rice - 150 grams
- Water - 400 ml
- Olive oil - 2 tablespoons
- Onion - 1 small, finely chopped
- Carrot - 1 medium, diced
- Bell pepper - 1/2, diced
- Garlic - 2 cloves, minced
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Turmeric - 1/2 teaspoon
- Cinnamon - 1/4 teaspoon
- Bay leaf - 1
- Pine nuts - 30 grams, toasted
- Fresh parsley - 2 tablespoons, chopped (for garnish)
Steps
- Rinse the basmati rice under cold water until the water runs clear, then soak it in warm water for 20 minutes.
- In a pot, heat the olive oil over medium heat and sauté the chopped onion until translucent.
- Add the diced carrot and bell pepper to the pot, cooking for an additional 5 minutes until they soften.
- Stir in the minced garlic, salt, black pepper, turmeric, cinnamon, and the bay leaf, cooking for another minute until fragrant.
- Drain the soaked rice and add it to the pot, stirring to coat the rice with the oil and spices.
- Pour in the water, bring to a boil, then reduce the heat to low, cover the pot, and simmer for 15 minutes or until the rice is cooked and the water is absorbed.
- Once cooked, remove from heat and let it sit for 5 minutes covered, then fluff the rice with a fork.
- Stir in the toasted pine nuts and garnish with chopped parsley before serving.
