Ingredients

  • Basmati rice - 150 grams
  • Water - 400 milliliters
  • Olive oil - 2 tablespoons
  • Onion - 1 medium, finely chopped
  • Garlic - 2 cloves, minced
  • Carrot - 1 medium, diced
  • Green bell pepper - 1 medium, diced
  • Tomato - 1 medium, diced
  • Pine nuts - 30 grams
  • Raisins - 30 grams
  • Cumin - 1 teaspoon
  • Turmeric - 1/2 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Fresh parsley - 2 tablespoons, chopped

Steps

  1. Rinse the basmati rice under cold water until the water runs clear, then soak it in water for 20 minutes.
  2. In a medium pot, heat the olive oil over medium heat. Add the chopped onion and garlic, and sauté until the onion is translucent, about 5 minutes.
  3. Stir in the diced carrot and green bell pepper, cooking for another 3-4 minutes until they soften.
  4. Add the diced tomato, cumin, turmeric, salt, and black pepper. Cook for about 2 minutes, allowing the tomatoes to break down slightly.
  5. Drain the soaked rice and add it to the pot, mixing well with the vegetables and spices.
  6. Pour in the 400 milliliters of water, then add the pine nuts and raisins. Bring to a boil.
  7. Once boiling, reduce the heat to low, cover, and simmer for 15-20 minutes or until the rice is cooked and the water is absorbed.
  8. Remove from heat and let it sit covered for an additional 5 minutes. Fluff the rice with a fork and mix in the chopped parsley before serving.
