- Basmati rice - 150 grams
- Chicken broth - 300 ml
- Butter - 30 grams
- Onion, finely chopped - 1 small
- Carrot, diced - 1 medium
- Red bell pepper, diced - 1 medium
- Pine nuts - 30 grams
- Raisins - 30 grams
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Cinnamon - 1/4 teaspoon
- Turmeric - 1/4 teaspoon
- Fresh parsley, chopped - 2 tablespoons
Steps
- Rinse the basmati rice under cold water until the water runs clear, then soak it in warm water for 20 minutes.
- In a medium saucepan, melt the butter over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
- Stir in the diced carrot, red bell pepper, and pine nuts. Cook for an additional 5 minutes until the vegetables are tender.
- Add the soaked and drained rice to the saucepan and stir well to coat the rice with the butter and vegetables.
- Add the chicken broth, raisins, salt, black pepper, cinnamon, and turmeric. Bring to a boil.
- Once boiling, reduce the heat to low, cover the saucepan, and simmer for 15-20 minutes until the rice is cooked and has absorbed all the liquid.
- Remove from heat and let it sit, covered, for an additional 5 minutes.
- Fluff the rice with a fork, stir in the chopped parsley, and serve warm.
