Ingredients

  • Basmati rice - 150 grams
  • Chicken broth - 300 ml
  • Butter - 30 grams
  • Onion, finely chopped - 1 small
  • Carrot, diced - 1 medium
  • Red bell pepper, diced - 1 medium
  • Pine nuts - 30 grams
  • Raisins - 30 grams
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Cinnamon - 1/4 teaspoon
  • Turmeric - 1/4 teaspoon
  • Fresh parsley, chopped - 2 tablespoons

Steps

  1. Rinse the basmati rice under cold water until the water runs clear, then soak it in warm water for 20 minutes.
  2. In a medium saucepan, melt the butter over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
  3. Stir in the diced carrot, red bell pepper, and pine nuts. Cook for an additional 5 minutes until the vegetables are tender.
  4. Add the soaked and drained rice to the saucepan and stir well to coat the rice with the butter and vegetables.
  5. Add the chicken broth, raisins, salt, black pepper, cinnamon, and turmeric. Bring to a boil.
  6. Once boiling, reduce the heat to low, cover the saucepan, and simmer for 15-20 minutes until the rice is cooked and has absorbed all the liquid.
  7. Remove from heat and let it sit, covered, for an additional 5 minutes.
  8. Fluff the rice with a fork, stir in the chopped parsley, and serve warm.
