Ingredients

  • Chicken breast - 300 grams
  • Greek yogurt - 100 grams
  • Olive oil - 2 tablespoons
  • Lemon juice - 1 tablespoon
  • Garlic - 2 cloves, minced
  • Paprika - 1 teaspoon
  • Cumin - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Salt - 1/2 teaspoon
  • Red onion - 1 medium, sliced
  • Bell pepper (any color) - 1 medium, sliced
  • Zucchini - 1 medium, sliced
  • Fresh parsley - 2 tablespoons, chopped

Steps

  1. In a mixing bowl, combine Greek yogurt, olive oil, lemon juice, minced garlic, paprika, cumin, black pepper, and salt to create a marinade.
  2. Cut the chicken breast into bite-sized pieces and add to the marinade. Mix well and let it marinate for at least 15 minutes.
  3. While the chicken is marinating, prepare the vegetables by slicing the red onion, bell pepper, and zucchini.
  4. Heat a grill pan over medium-high heat and add the marinated chicken pieces. Cook for about 10-12 minutes, turning occasionally until fully cooked and nicely charred.
  5. In the last 5 minutes of cooking the chicken, add the sliced vegetables to the grill pan. Cook until they are tender and slightly charred.
  6. Once cooked, remove from heat and sprinkle chopped fresh parsley on top before serving.
