- Chicken breast - 300 grams
- Greek yogurt - 100 grams
- Olive oil - 2 tablespoons
- Lemon juice - 1 tablespoon
- Garlic - 2 cloves, minced
- Paprika - 1 teaspoon
- Cumin - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Salt - 1/2 teaspoon
- Red onion - 1 medium, sliced
- Bell pepper (any color) - 1 medium, sliced
- Zucchini - 1 medium, sliced
- Fresh parsley - 2 tablespoons, chopped
Steps
- In a mixing bowl, combine Greek yogurt, olive oil, lemon juice, minced garlic, paprika, cumin, black pepper, and salt to create a marinade.
- Cut the chicken breast into bite-sized pieces and add to the marinade. Mix well and let it marinate for at least 15 minutes.
- While the chicken is marinating, prepare the vegetables by slicing the red onion, bell pepper, and zucchini.
- Heat a grill pan over medium-high heat and add the marinated chicken pieces. Cook for about 10-12 minutes, turning occasionally until fully cooked and nicely charred.
- In the last 5 minutes of cooking the chicken, add the sliced vegetables to the grill pan. Cook until they are tender and slightly charred.
- Once cooked, remove from heat and sprinkle chopped fresh parsley on top before serving.
