- Water - 500 ml
- Vegan yogurt - 200 g
- Garlic - 3 cloves, minced
- Rice - 50 g
- Olive oil - 1 tablespoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Dried mint - 1 teaspoon
- Fresh parsley - for garnish
Steps
- In a medium pot, bring the water to a boil and add the rice. Cook for about 15-20 minutes until the rice is tender.
- While the rice is cooking, in a mixing bowl, combine the vegan yogurt, minced garlic, salt, black pepper, and dried mint. Stir well to create a smooth mixture.
- Once the rice is cooked, reduce the heat to low and add a ladle of the hot rice water to the yogurt mixture, stirring continuously to temper the yogurt and prevent curdling.
- Gradually add the tempered yogurt mixture back into the pot with the remaining rice and water, stirring well to combine.
- Allow the soup to heat through for about 5 minutes without boiling, then remove from heat.
- In a small pan, heat the olive oil over medium heat and drizzle it over the soup just before serving.
- Garnish with fresh parsley and serve warm.
