Ingredients

  • Water - 500 ml
  • Vegan yogurt - 200 g
  • Garlic - 3 cloves, minced
  • Rice - 50 g
  • Olive oil - 1 tablespoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Dried mint - 1 teaspoon
  • Fresh parsley - for garnish

Steps

  1. In a medium pot, bring the water to a boil and add the rice. Cook for about 15-20 minutes until the rice is tender.
  2. While the rice is cooking, in a mixing bowl, combine the vegan yogurt, minced garlic, salt, black pepper, and dried mint. Stir well to create a smooth mixture.
  3. Once the rice is cooked, reduce the heat to low and add a ladle of the hot rice water to the yogurt mixture, stirring continuously to temper the yogurt and prevent curdling.
  4. Gradually add the tempered yogurt mixture back into the pot with the remaining rice and water, stirring well to combine.
  5. Allow the soup to heat through for about 5 minutes without boiling, then remove from heat.
  6. In a small pan, heat the olive oil over medium heat and drizzle it over the soup just before serving.
  7. Garnish with fresh parsley and serve warm.
