  • Carrot - 1 medium (about 100g), peeled and diced
  • Onion - 1 small, chopped
  • Cumin - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Salt - to taste
  • Fresh parsley - for garnish

Steps

  1. Heat olive oil in a medium pot over medium heat.
  2. Add chopped onion and sauté for 3-4 minutes until translucent.
  3. Mince the garlic cloves and add them to the pot, cooking for an additional 2 minutes until fragrant.
  4. Stir in the diced potato and carrot, cooking for another 5 minutes while stirring occasionally.
  5. Add the vegetable broth, cumin, black pepper, and salt to the pot.
  6. Bring the mixture to a boil, then reduce heat and let it simmer for about 15 minutes, or until the vegetables are tender.
  7. Using an immersion blender, puree the soup until smooth. Alternatively, transfer to a regular blender in batches.
  8. Taste and adjust seasoning if necessary, then serve hot, garnished with fresh parsley.
