- Garlic - 6 cloves

- Vegetable broth - 500 ml
- Potato - 1 medium (about 150g), peeled and diced
- Carrot - 1 medium (about 100g), peeled and diced
- Onion - 1 small, chopped
- Cumin - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Salt - to taste
- Fresh parsley - for garnish
Steps
- Heat olive oil in a medium pot over medium heat.
- Add chopped onion and sauté for 3-4 minutes until translucent.
- Mince the garlic cloves and add them to the pot, cooking for an additional 2 minutes until fragrant.
- Stir in the diced potato and carrot, cooking for another 5 minutes while stirring occasionally.
- Add the vegetable broth, cumin, black pepper, and salt to the pot.
- Bring the mixture to a boil, then reduce heat and let it simmer for about 15 minutes, or until the vegetables are tender.
- Using an immersion blender, puree the soup until smooth. Alternatively, transfer to a regular blender in batches.
- Taste and adjust seasoning if necessary, then serve hot, garnished with fresh parsley.
