Ingredients

  • Fresh mussels - 500 grams
  • Water - 500 ml
  • Dried mastic gum - 2 grams, crushed
  • Garlic - 2 cloves, minced
  • Olive oil - 2 tablespoons
  • Lemon - 1, juiced
  • Fresh parsley - 2 tablespoons, chopped
  • Sea salt - to taste
  • Black pepper - to taste

Steps

  1. Rinse the fresh mussels under cold water, scrubbing the shells to remove any dirt or debris. Discard any mussels that are open and do not close when tapped.
  2. In a large pot, bring 500 ml of water to a boil. Add the cleaned mussels and cover the pot. Steam the mussels for about 5-7 minutes or until they have opened up.
  3. Once cooked, remove the mussels with a slotted spoon and set aside, discarding any that remain closed.
  4. In the same pot, heat 2 tablespoons of olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant, being careful not to burn it.
  5. Add the crushed mastic gum to the pot and stir for another minute to release its aroma.
  6. Return the mussels to the pot, squeezing the juice of one lemon over them. Season with sea salt and black pepper to taste. Toss gently to combine.
  7. Remove from heat and transfer to a serving dish. Garnish with chopped fresh parsley before serving.
