- Fresh mussels - 500 grams
- Water - 500 ml
- Dried mastic gum - 2 grams, crushed
- Garlic - 2 cloves, minced
- Olive oil - 2 tablespoons
- Lemon - 1, juiced
- Fresh parsley - 2 tablespoons, chopped
- Sea salt - to taste
- Black pepper - to taste
Steps
- Rinse the fresh mussels under cold water, scrubbing the shells to remove any dirt or debris. Discard any mussels that are open and do not close when tapped.
- In a large pot, bring 500 ml of water to a boil. Add the cleaned mussels and cover the pot. Steam the mussels for about 5-7 minutes or until they have opened up.
- Once cooked, remove the mussels with a slotted spoon and set aside, discarding any that remain closed.
- In the same pot, heat 2 tablespoons of olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant, being careful not to burn it.
- Add the crushed mastic gum to the pot and stir for another minute to release its aroma.
- Return the mussels to the pot, squeezing the juice of one lemon over them. Season with sea salt and black pepper to taste. Toss gently to combine.
- Remove from heat and transfer to a serving dish. Garnish with chopped fresh parsley before serving.
