Ingredients

  • Lamb shoulder - 300 grams, cubed
  • Olive oil - 3 tablespoons
  • Mastic resin (ground) - 1 teaspoon
  • Garlic - 2 cloves, minced
  • Yogurt - 100 grams
  • Lemon juice - 1 tablespoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Paprika - 1 teaspoon
  • Red bell pepper - 1, cut into chunks
  • Onion - 1, cut into chunks
  • Cherry tomatoes - 200 grams, whole
  • Fresh parsley - for garnish

Steps

  1. In a bowl, combine olive oil, ground mastic resin, minced garlic, yogurt, lemon juice, salt, black pepper, and paprika to create a marinade.
  2. Add the cubed lamb shoulder to the marinade, ensuring all pieces are well coated. Cover and let it marinate in the refrigerator for at least 30 minutes.
  3. Preheat your grill to medium-high heat.
  4. Thread the marinated lamb, red bell pepper, onion, and cherry tomatoes onto skewers, alternating between meat and vegetables.
  5. Grill the skewers for about 10-12 minutes, turning occasionally, until the lamb is cooked to your desired doneness.
  6. Remove from the grill and let rest for a few minutes before serving.
  7. Garnish with fresh parsley and serve with a side of rice or pita bread.
