- Yogurt - 100 grams
- Lemon juice - 1 tablespoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Paprika - 1 teaspoon
- Red bell pepper - 1, cut into chunks
- Onion - 1, cut into chunks
- Cherry tomatoes - 200 grams, whole
- Fresh parsley - for garnish
Steps
- In a bowl, combine olive oil, ground mastic resin, minced garlic, yogurt, lemon juice, salt, black pepper, and paprika to create a marinade.
- Add the cubed lamb shoulder to the marinade, ensuring all pieces are well coated. Cover and let it marinate in the refrigerator for at least 30 minutes.
- Preheat your grill to medium-high heat.
- Thread the marinated lamb, red bell pepper, onion, and cherry tomatoes onto skewers, alternating between meat and vegetables.
- Grill the skewers for about 10-12 minutes, turning occasionally, until the lamb is cooked to your desired doneness.
- Remove from the grill and let rest for a few minutes before serving.
- Garnish with fresh parsley and serve with a side of rice or pita bread.
