Ingredients
- Whole milk - 500 ml
- Granulated sugar - 100 g
- Heavy cream - 200 ml
- Cornstarch - 30 g
- Mastic resin (ground) - 5 g
- Vanilla extract - 1 tsp
- Pistachios (for garnish) - 20 g
Steps
- In a small bowl, mix the cornstarch with a few tablespoons of the cold milk to create a smooth paste.
- In a saucepan, combine the remaining milk, sugar, and heavy cream. Heat over medium heat until it begins to steam, but do not let it boil.
- Add the cornstarch paste to the saucepan, stirring constantly until the mixture thickens, about 5-7 minutes.
- Once thickened, remove from heat and stir in the ground mastic resin and vanilla extract until fully incorporated.
- Transfer the mixture to a bowl and let it cool to room temperature, then cover and refrigerate for at least 2 hours or until completely chilled.
- Churn the chilled mixture in an ice cream maker according to the manufacturer's instructions until it reaches a soft-serve consistency.
- Transfer the ice cream to an airtight container and freeze for at least 4 hours to firm up.
- Serve scoops of Sakızlı Dondurma garnished with crushed pistachios.
