Ingredients

  • Whole milk - 500 ml
  • Granulated sugar - 100 g
  • Heavy cream - 200 ml
  • Cornstarch - 30 g
  • Mastic resin (ground) - 5 g
  • Vanilla extract - 1 tsp
  • Pistachios (for garnish) - 20 g

Steps

  1. In a small bowl, mix the cornstarch with a few tablespoons of the cold milk to create a smooth paste.
  2. In a saucepan, combine the remaining milk, sugar, and heavy cream. Heat over medium heat until it begins to steam, but do not let it boil.
  3. Add the cornstarch paste to the saucepan, stirring constantly until the mixture thickens, about 5-7 minutes.
  4. Once thickened, remove from heat and stir in the ground mastic resin and vanilla extract until fully incorporated.
  5. Transfer the mixture to a bowl and let it cool to room temperature, then cover and refrigerate for at least 2 hours or until completely chilled.
  6. Churn the chilled mixture in an ice cream maker according to the manufacturer's instructions until it reaches a soft-serve consistency.
  7. Transfer the ice cream to an airtight container and freeze for at least 4 hours to firm up.
  8. Serve scoops of Sakızlı Dondurma garnished with crushed pistachios.
