Ingredients

  • Rice - 50 grams
  • Water - 500 milliliters
  • Milk - 500 milliliters
  • Sugar - 30 grams
  • Vanilla extract - 1 teaspoon
  • Cornstarch - 1 tablespoon
  • Salt - a pinch
  • Cinnamon - for garnish
  • Chopped nuts (e.g., almonds or pistachios) - for garnish

Steps

  1. In a medium saucepan, combine the rice and water. Bring to a boil over medium heat, then reduce the heat to low, cover, and simmer for about 15 minutes, or until the rice is tender.
  2. Once the rice is cooked, add the milk, sugar, and a pinch of salt to the saucepan. Stir well and bring the mixture to a gentle simmer over medium heat.
  3. In a small bowl, mix the cornstarch with a little cold water to create a slurry. Gradually add this slurry to the simmering soup while stirring continuously to avoid lumps.
  4. Add the vanilla extract and continue to cook for another 5-10 minutes, stirring frequently, until the soup thickens slightly.
  5. Remove from heat and let it cool for a few minutes. Serve warm or chilled, garnished with a sprinkle of cinnamon and chopped nuts.
