Ingredients
- Rice - 50 grams
- Water - 500 ml
- Milk - 500 ml
- Sugar - 100 grams
- Vanilla extract - 1 teaspoon
- Cornstarch - 1 tablespoon
- Salt - a pinch
- Ground cinnamon - for garnish
Steps
- Rinse the rice under cold water until the water runs clear, then drain.
- In a medium saucepan, combine the rinsed rice and water. Bring to a boil over medium heat, then reduce to low and simmer for about 15 minutes, or until the rice is tender and the water is absorbed.
- Add the milk, sugar, and a pinch of salt to the cooked rice. Stir well and bring to a gentle simmer over low heat, stirring frequently to prevent sticking.
- In a small bowl, mix the cornstarch with a few tablespoons of cold water to form a slurry. Add this to the rice mixture, stirring continuously until the pudding thickens, about 5-7 minutes.
- Remove the saucepan from heat, then stir in the vanilla extract.
- Divide the pudding into two serving bowls and let it cool slightly. Refrigerate for at least 1 hour before serving.
- Before serving, sprinkle a little ground cinnamon on top for garnish.
