Ingredients

  • Cauliflower - 300 grams, chopped
  • Water - 500 ml
  • Milk - 200 ml (or unsweetened almond milk for a lower carb option)
  • Butter - 30 grams
  • Onion - 50 grams, finely chopped
  • Garlic - 1 clove, minced
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Paprika - 1/2 teaspoon
  • Dried mint - 1 teaspoon
  • Lemon juice - 1 tablespoon
  • Fresh parsley - for garnish

Steps

  1. In a large pot, melt the butter over medium heat. Add the chopped onion and garlic, sautéing until they are translucent.
  2. Add the chopped cauliflower to the pot and pour in the water. Bring to a boil, then reduce the heat and let it simmer for about 15 minutes, or until the cauliflower is tender.
  3. Using an immersion blender, blend the mixture until smooth. If using a regular blender, carefully transfer the soup in batches and blend until smooth.
  4. Return the blended soup to the pot. Stir in the milk, salt, black pepper, paprika, and dried mint. Heat gently until warmed through, but do not boil.
  5. Add lemon juice to the soup and adjust seasoning if necessary. Serve hot, garnished with fresh parsley.
