Ingredients
- Cauliflower - 300 grams, chopped
- Water - 500 ml
- Milk - 200 ml (or unsweetened almond milk for a lower carb option)
- Butter - 30 grams
- Onion - 50 grams, finely chopped
- Garlic - 1 clove, minced
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Paprika - 1/2 teaspoon
- Dried mint - 1 teaspoon
- Lemon juice - 1 tablespoon
- Fresh parsley - for garnish
Steps
- In a large pot, melt the butter over medium heat. Add the chopped onion and garlic, sautéing until they are translucent.
- Add the chopped cauliflower to the pot and pour in the water. Bring to a boil, then reduce the heat and let it simmer for about 15 minutes, or until the cauliflower is tender.
- Using an immersion blender, blend the mixture until smooth. If using a regular blender, carefully transfer the soup in batches and blend until smooth.
- Return the blended soup to the pot. Stir in the milk, salt, black pepper, paprika, and dried mint. Heat gently until warmed through, but do not boil.
- Add lemon juice to the soup and adjust seasoning if necessary. Serve hot, garnished with fresh parsley.
