  • Butter - 1 tablespoon
  • Olive oil - 1 tablespoon
  • Milk - 500 milliliters
  • Vegetable broth - 250 milliliters
  • Salt - to taste
  • Black pepper - to taste
  • Paprika - 1 teaspoon
  • Fresh parsley - for garnish

Steps

  1. In a medium pot, melt the butter and olive oil over medium heat.
  2. Add the chopped onion and garlic, sautéing until translucent, about 3-4 minutes.
  3. Stir in the sweet corn and cook for another 2-3 minutes.
  4. Pour in the vegetable broth and bring to a simmer. Cook for 10 minutes.
  5. Using an immersion blender, puree the soup until smooth. If you prefer a chunkier texture, blend only half of the soup.
  6. Stir in the milk, paprika, salt, and black pepper, and return to a gentle heat for another 5 minutes.
  7. Serve hot, garnished with fresh parsley.
