- Milk - 500 milliliters
- Vegetable broth - 250 milliliters
- Salt - to taste
- Black pepper - to taste
- Paprika - 1 teaspoon
- Fresh parsley - for garnish
Steps
- In a medium pot, melt the butter and olive oil over medium heat.
- Add the chopped onion and garlic, sautéing until translucent, about 3-4 minutes.
- Stir in the sweet corn and cook for another 2-3 minutes.
- Pour in the vegetable broth and bring to a simmer. Cook for 10 minutes.
- Using an immersion blender, puree the soup until smooth. If you prefer a chunkier texture, blend only half of the soup.
- Stir in the milk, paprika, salt, and black pepper, and return to a gentle heat for another 5 minutes.
- Serve hot, garnished with fresh parsley.
