Ingredients
- Long-grain rice - 150 grams
- Water - 400 milliliters
- Olive oil - 2 tablespoons
- Onion - 1 small, finely chopped
- Carrot - 1 medium, diced
- Red bell pepper - 1 small, diced
- Green peas - 100 grams (fresh or frozen)
- Garlic - 2 cloves, minced
- Tomato paste - 1 tablespoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Turmeric powder - 1/2 teaspoon
- Cumin - 1/2 teaspoon
- Fresh parsley - 2 tablespoons, chopped
Steps
- Rinse the long-grain rice under cold water until the water runs clear. Soak it in water for 20 minutes, then drain.
- In a medium saucepan, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
- Add the diced carrot and red bell pepper to the saucepan. Sauté for another 5 minutes until the vegetables begin to soften.
- Stir in the minced garlic and cook for 1 minute until fragrant.
- Add the drained rice to the saucepan and stir well to coat the rice with the oil and vegetables.
- Mix in the tomato paste, salt, black pepper, turmeric, and cumin. Stir until the rice is well combined with the spices.
- Pour in the water and bring the mixture to a boil. Once boiling, reduce the heat to low, cover the saucepan, and let it simmer for 15 minutes.
- After 15 minutes, add the green peas on top of the rice without stirring. Cover again and cook for an additional 5 minutes.
- Remove the saucepan from heat and let it sit, covered, for 5 minutes to allow the rice to finish cooking.
- Fluff the rice with a fork, sprinkle with fresh parsley, and serve hot.
