Ingredients

  • Long-grain rice - 150 grams
  • Water - 400 milliliters
  • Olive oil - 2 tablespoons
  • Onion - 1 small, finely chopped
  • Carrot - 1 medium, diced
  • Red bell pepper - 1 small, diced
  • Green peas - 100 grams (fresh or frozen)
  • Garlic - 2 cloves, minced
  • Tomato paste - 1 tablespoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Turmeric powder - 1/2 teaspoon
  • Cumin - 1/2 teaspoon
  • Fresh parsley - 2 tablespoons, chopped

Steps

  1. Rinse the long-grain rice under cold water until the water runs clear. Soak it in water for 20 minutes, then drain.
  2. In a medium saucepan, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
  3. Add the diced carrot and red bell pepper to the saucepan. Sauté for another 5 minutes until the vegetables begin to soften.
  4. Stir in the minced garlic and cook for 1 minute until fragrant.
  5. Add the drained rice to the saucepan and stir well to coat the rice with the oil and vegetables.
  6. Mix in the tomato paste, salt, black pepper, turmeric, and cumin. Stir until the rice is well combined with the spices.
  7. Pour in the water and bring the mixture to a boil. Once boiling, reduce the heat to low, cover the saucepan, and let it simmer for 15 minutes.
  8. After 15 minutes, add the green peas on top of the rice without stirring. Cover again and cook for an additional 5 minutes.
  9. Remove the saucepan from heat and let it sit, covered, for 5 minutes to allow the rice to finish cooking.
  10. Fluff the rice with a fork, sprinkle with fresh parsley, and serve hot.
