- Red lentils - 100 grams
- Chicken breast - 150 grams
- Onion - 1 medium, finely chopped
- Carrot - 1 medium, diced
- Celery - 1 stalk, diced
- Garlic - 2 cloves, minced
- Vegetable broth - 500 milliliters
- Olive oil - 2 tablespoons
- Ground cumin - 1 teaspoon
- Paprika - 1 teaspoon
- Salt - to taste
- Black pepper - to taste
- Lemon juice - 1 tablespoon
- Fresh parsley - for garnish
Steps
- In a large pot, heat the olive oil over medium heat. Add the chopped onion, carrot, and celery, and sauté until softened, about 5-7 minutes.
- Add the minced garlic, ground cumin, and paprika, cooking for an additional 1-2 minutes until fragrant.
- Cut the chicken breast into small pieces and add to the pot, stirring well until the chicken is lightly browned.
- Add the red lentils and vegetable broth to the pot, bringing it to a boil. Once boiling, reduce the heat and let it simmer for about 25 minutes, or until the lentils and chicken are cooked through.
- Use an immersion blender to blend the soup to your desired consistency, or leave it chunky if preferred.
- Season with salt, black pepper, and lemon juice to taste. Stir well and cook for another 5 minutes.
- Serve hot, garnished with fresh parsley.
