  • Red lentils - 100 grams
  • Chicken breast - 150 grams

  • Celery - 1 stalk, diced
  • Garlic - 2 cloves, minced
  • Vegetable broth - 500 milliliters
  • Olive oil - 2 tablespoons
  • Ground cumin - 1 teaspoon
  • Paprika - 1 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Lemon juice - 1 tablespoon
  • Fresh parsley - for garnish

Steps

  1. In a large pot, heat the olive oil over medium heat. Add the chopped onion, carrot, and celery, and sauté until softened, about 5-7 minutes.
  2. Add the minced garlic, ground cumin, and paprika, cooking for an additional 1-2 minutes until fragrant.
  3. Cut the chicken breast into small pieces and add to the pot, stirring well until the chicken is lightly browned.
  4. Add the red lentils and vegetable broth to the pot, bringing it to a boil. Once boiling, reduce the heat and let it simmer for about 25 minutes, or until the lentils and chicken are cooked through.
  5. Use an immersion blender to blend the soup to your desired consistency, or leave it chunky if preferred.
  6. Season with salt, black pepper, and lemon juice to taste. Stir well and cook for another 5 minutes.
  7. Serve hot, garnished with fresh parsley.
