Ingredients

  • Fresh squid - 300 grams
  • Olive oil - 2 tablespoons
  • Lemon juice - 2 tablespoons
  • Garlic - 2 cloves, minced
  • Fresh parsley - 2 tablespoons, chopped
  • Dried oregano - 1 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Lemon wedges - 2 for serving

Steps

  1. Clean the squid thoroughly, removing the insides and the transparent quill, then cut them into rings.
  2. In a bowl, mix olive oil, lemon juice, minced garlic, chopped parsley, dried oregano, salt, and black pepper to create a marinade.
  3. Add the squid rings to the marinade and let them sit for about 15 minutes to absorb the flavors.
  4. Preheat a grill or grill pan over medium-high heat.
  5. Once hot, place the marinated squid rings on the grill and cook for about 2-3 minutes on each side, or until they turn opaque and have nice grill marks.
  6. Remove the squid from the grill and serve immediately with lemon wedges on the side.
