Ingredients

  • Red lentils - 150 grams
  • Onion - 1 medium, finely chopped
  • Garlic - 2 cloves, minced
  • Carrot - 1 medium, diced
  • Bell pepper - 1 medium, diced
  • Tomato - 1 large, diced
  • Vegetable broth - 500 ml
  • Olive oil - 2 tablespoons
  • Cumin - 1 teaspoon
  • Paprika - 1 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Fresh parsley - 2 tablespoons, chopped

Steps

  1. Heat the olive oil in a large pot over medium heat. Add the chopped onion and sauté for about 5 minutes until translucent.
  2. Add the minced garlic, diced carrot, and diced bell pepper to the pot. Cook for an additional 5 minutes, stirring occasionally.
  3. Stir in the diced tomato, cumin, paprika, salt, and black pepper. Cook for 2-3 minutes until the tomatoes start to break down.
  4. Add the red lentils and vegetable broth to the pot. Bring the mixture to a boil, then reduce the heat to low and simmer for about 20 minutes, or until the lentils are tender.
  5. Once cooked, taste and adjust seasoning if necessary. Remove from heat and stir in the chopped parsley.
  6. Serve hot, garnished with additional parsley if desired.
