Sübye

- Red lentils - 150 grams
- Onion - 1 medium, finely chopped
- Garlic - 2 cloves, minced
- Carrot - 1 medium, diced
- Bell pepper - 1 medium, diced
- Tomato - 1 large, diced
- Vegetable broth - 500 ml
- Olive oil - 2 tablespoons
- Cumin - 1 teaspoon
- Paprika - 1 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Fresh parsley - 2 tablespoons, chopped
Steps
- Heat the olive oil in a large pot over medium heat. Add the chopped onion and sauté for about 5 minutes until translucent.
- Add the minced garlic, diced carrot, and diced bell pepper to the pot. Cook for an additional 5 minutes, stirring occasionally.
- Stir in the diced tomato, cumin, paprika, salt, and black pepper. Cook for 2-3 minutes until the tomatoes start to break down.
- Add the red lentils and vegetable broth to the pot. Bring the mixture to a boil, then reduce the heat to low and simmer for about 20 minutes, or until the lentils are tender.
- Once cooked, taste and adjust seasoning if necessary. Remove from heat and stir in the chopped parsley.
- Serve hot, garnished with additional parsley if desired.
