  • Feta cheese - 50 grams
  • Olive oil - 2 tablespoons (30 ml)
  • Lemon juice - 1 tablespoon (15 ml)
  • Salt - to taste
  • Black pepper - to taste
  • Fresh parsley - 2 tablespoons, chopped

Steps

  1. Wash the arugula thoroughly and gently dry it using a salad spinner or paper towels.
  2. Halve the cherry tomatoes and chop the cucumber into bite-sized pieces.
  3. Thinly slice the red onion.
  4. Crumble the feta cheese into small pieces.
  5. In a large bowl, combine the arugula, cherry tomatoes, cucumber, red onion, and feta cheese.
  6. In a small bowl, whisk together the olive oil, lemon juice, salt, and black pepper to create the dressing.
  7. Drizzle the dressing over the salad and toss gently to combine all ingredients.
  8. Garnish with chopped fresh parsley before serving.
