  • Water - 100 ml
  • Olive oil - 30 ml
  • Feta cheese - 100 grams, crumbled
  • Fresh parsley - 10 grams, finely chopped
  • Black pepper - 2 grams
  • Egg - 1, beaten (for egg wash)

Steps

  1. In a mixing bowl, combine the all-purpose flour and salt. Slowly add the water and olive oil, and knead until a smooth dough forms. Cover with a damp cloth and let it rest for 15 minutes.
  2. In a separate bowl, mix the crumbled feta cheese, chopped parsley, and black pepper until well combined.
  3. Divide the dough into two equal portions. Roll each portion into a thin circle on a floured surface.
  4. Spread half of the feta mixture onto one half of each dough circle, leaving a border around the edges.
  5. Fold the other half of the dough over the filling and press down the edges to seal. You can crimp the edges for a decorative touch.
  6. Preheat the oven to 180°C (350°F). Place the çörek on a baking sheet lined with parchment paper.
  7. Brush the tops with the beaten egg for a golden finish.
  8. Bake in the preheated oven for about 20-25 minutes, or until golden brown.
  9. Remove from the oven and allow to cool slightly before serving.
