- whole wheat flour - 200 grams
- all-purpose flour - 100 grams
- warm water - 150 ml
- olive oil - 2 tablespoons
- active dry yeast - 7 grams
- salt - 1 teaspoon
- black cumin seeds (çörek otu) - 1 tablespoon
- honey - 1 teaspoon
Steps
- In a small bowl, mix the warm water, honey, and active dry yeast. Let it sit for 10 minutes until frothy.
- In a large mixing bowl, combine the whole wheat flour, all-purpose flour, and salt. Make a well in the center.
- Add the frothy yeast mixture and olive oil to the well in the flour mixture. Stir until a dough begins to form.
- Knead the dough on a floured surface for about 10 minutes until smooth and elastic.
- Place the dough in a lightly oiled bowl, cover with a damp cloth, and let it rise in a warm place for about 30 minutes or until doubled in size.
- Preheat the oven to 220°C (428°F).
- Once the dough has risen, punch it down and knead in the black cumin seeds.
- Shape the dough into a round loaf and place it on a baking sheet lined with parchment paper.
- Let the shaped loaf rest for an additional 10 minutes while the oven heats.
- Bake the bread in the preheated oven for 20-25 minutes or until golden brown and hollow sounding when tapped on the bottom.
- Cool on a wire rack before slicing and serving.
