Ingredients

  • whole wheat flour - 200 grams
  • all-purpose flour - 100 grams
  • warm water - 150 ml
  • olive oil - 2 tablespoons
  • active dry yeast - 7 grams
  • salt - 1 teaspoon
  • black cumin seeds (çörek otu) - 1 tablespoon
  • honey - 1 teaspoon

Steps

  1. In a small bowl, mix the warm water, honey, and active dry yeast. Let it sit for 10 minutes until frothy.
  2. In a large mixing bowl, combine the whole wheat flour, all-purpose flour, and salt. Make a well in the center.
  3. Add the frothy yeast mixture and olive oil to the well in the flour mixture. Stir until a dough begins to form.
  4. Knead the dough on a floured surface for about 10 minutes until smooth and elastic.
  5. Place the dough in a lightly oiled bowl, cover with a damp cloth, and let it rise in a warm place for about 30 minutes or until doubled in size.
  6. Preheat the oven to 220°C (428°F).
  7. Once the dough has risen, punch it down and knead in the black cumin seeds.
  8. Shape the dough into a round loaf and place it on a baking sheet lined with parchment paper.
  9. Let the shaped loaf rest for an additional 10 minutes while the oven heats.
  10. Bake the bread in the preheated oven for 20-25 minutes or until golden brown and hollow sounding when tapped on the bottom.
  11. Cool on a wire rack before slicing and serving.
