Ingredients

  • Semolina - 100 grams
  • Greek yogurt - 100 grams
  • Unsalted butter - 30 grams
  • Granulated sugar - 50 grams
  • Water - 200 ml
  • Chopped walnuts - 30 grams
  • Ground cinnamon - 1 teaspoon
  • Vanilla extract - 1 teaspoon
  • Salt - a pinch

Steps

  1. In a saucepan, melt the unsalted butter over medium heat.
  2. Add the semolina and sauté for about 5-7 minutes until it turns golden brown, stirring continuously.
  3. In a separate bowl, mix the Greek yogurt, sugar, and a pinch of salt until well combined.
  4. Gradually add the yogurt mixture to the semolina, stirring continuously to prevent lumps.
  5. Pour in the water and continue stirring until the mixture thickens, about 10 minutes.
  6. Add chopped walnuts, ground cinnamon, and vanilla extract, mixing well.
  7. Once the mixture is thick and pulls away from the sides of the saucepan, remove it from heat.
  8. Transfer to a greased dish, smoothing the top, and let it cool for about 10 minutes.
  9. Cut into squares or diamond shapes and serve warm or at room temperature.
