Ingredients

  • Rice flour pasta - 200 grams
  • Olive oil - 2 tablespoons
  • Onion - 1 medium, finely chopped
  • Garlic - 2 cloves, minced
  • Bell pepper - 1 medium, diced
  • Zucchini - 1 medium, diced
  • Tomato - 1 medium, diced
  • Vegetable broth - 500 ml
  • Cumin powder - 1 teaspoon
  • Paprika - 1 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Fresh parsley - for garnish

Steps

  1. In a large pot, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
  2. Add the minced garlic and sauté for an additional minute until fragrant.
  3. Stir in the diced bell pepper and zucchini, cooking for another 5 minutes until the vegetables are slightly softened.
  4. Add the diced tomato, cumin, paprika, salt, and black pepper. Cook for 3-4 minutes until the tomatoes break down.
  5. Pour in the vegetable broth and bring to a boil.
  6. Add the rice flour pasta to the boiling broth. Reduce heat to medium-low and simmer for 10-12 minutes, stirring occasionally, until the pasta is cooked al dente.
  7. Remove from heat and let it sit for a couple of minutes before serving.
  8. Serve hot, garnished with fresh parsley.
