- Rice flour pasta - 200 grams
- Olive oil - 2 tablespoons
- Onion - 1 medium, finely chopped
- Garlic - 2 cloves, minced
- Bell pepper - 1 medium, diced
- Zucchini - 1 medium, diced
- Tomato - 1 medium, diced
- Vegetable broth - 500 ml
- Cumin powder - 1 teaspoon
- Paprika - 1 teaspoon
- Salt - to taste
- Black pepper - to taste
- Fresh parsley - for garnish
Steps
- In a large pot, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
- Add the minced garlic and sauté for an additional minute until fragrant.
- Stir in the diced bell pepper and zucchini, cooking for another 5 minutes until the vegetables are slightly softened.
- Add the diced tomato, cumin, paprika, salt, and black pepper. Cook for 3-4 minutes until the tomatoes break down.
- Pour in the vegetable broth and bring to a boil.
- Add the rice flour pasta to the boiling broth. Reduce heat to medium-low and simmer for 10-12 minutes, stirring occasionally, until the pasta is cooked al dente.
- Remove from heat and let it sit for a couple of minutes before serving.
- Serve hot, garnished with fresh parsley.
