Ingredients

  • Carrot - 1 medium, diced
  • Red bell pepper - 1 medium, diced
  • Green peas - 100 grams, frozen or fresh
  • Garlic - 2 cloves, minced
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Paprika - 1/2 teaspoon
  • Fresh parsley - 2 tablespoons, chopped

Steps

  1. Rinse the long-grain rice under cold water until the water runs clear, then drain.
  2. In a medium saucepan, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 3-4 minutes.
  3. Add the minced garlic and diced carrot to the saucepan, cooking for another 2-3 minutes until the carrot softens.
  4. Stir in the diced red bell pepper and green peas, cooking for an additional 2 minutes.
  5. Add the rinsed rice to the vegetable mixture, stirring well to combine.
  6. Pour in the water, then add salt, black pepper, and paprika. Bring to a boil.
  7. Once boiling, reduce the heat to low, cover the saucepan, and let it simmer for about 15-20 minutes or until the rice is cooked and has absorbed all the water.
  8. Remove from heat and let it sit, covered, for an additional 5 minutes.
  9. Fluff the rice with a fork, then stir in the chopped parsley before serving.
