- Bell pepper - 2 medium
- Rice (short-grain or medium-grain) - 100 grams
- Onion - 1 medium, finely chopped
- Garlic - 2 cloves, minced
- Tomato - 1 medium, diced
- Olive oil - 2 tablespoons
- Vegetable broth - 250 milliliters
- Fresh parsley - 2 tablespoons, chopped
- Fresh dill - 1 tablespoon, chopped
- Black pepper - 1/2 teaspoon
- Salt - 1/2 teaspoon
- Lemon juice - 1 tablespoon
- Pine nuts - 30 grams (optional)
- Ground cinnamon - 1/4 teaspoon (optional)
Steps
- Preheat your oven to 180°C (350°F).
- In a medium saucepan, heat 1 tablespoon of olive oil over medium heat. Add the chopped onion and garlic, sauté until softened and translucent, about 5 minutes.
- Add the diced tomato, rice, black pepper, salt, and ground cinnamon (if using) to the saucepan. Stir well and cook for another 2 minutes.
- Pour in the vegetable broth and bring to a boil. Once boiling, reduce the heat to low, cover, and let it simmer for about 15 minutes until the rice is cooked and the liquid is absorbed.
- While the rice is cooking, prepare the bell peppers by cutting off the tops and removing the seeds. Drizzle the insides with a bit of olive oil and a sprinkle of salt.
- Once the rice has finished cooking, remove it from heat and stir in the fresh parsley, dill, lemon juice, and pine nuts (if using). Allow the mixture to cool slightly.
- Stuff the bell peppers with the rice mixture, packing it gently but firmly.
- Place the stuffed peppers upright in a baking dish. Drizzle with the remaining olive oil and cover the dish with aluminum foil.
- Bake in the preheated oven for 25-30 minutes, or until the peppers are tender.
- Serve warm, garnished with extra chopped herbs if desired.
