Ingredients

  • Bell pepper - 2 medium
  • Rice (short-grain or medium-grain) - 100 grams
  • Onion - 1 medium, finely chopped
  • Garlic - 2 cloves, minced
  • Tomato - 1 medium, diced
  • Olive oil - 2 tablespoons
  • Vegetable broth - 250 milliliters
  • Fresh parsley - 2 tablespoons, chopped
  • Fresh dill - 1 tablespoon, chopped
  • Black pepper - 1/2 teaspoon
  • Salt - 1/2 teaspoon
  • Lemon juice - 1 tablespoon
  • Pine nuts - 30 grams (optional)
  • Ground cinnamon - 1/4 teaspoon (optional)

Steps

  1. Preheat your oven to 180°C (350°F).
  2. In a medium saucepan, heat 1 tablespoon of olive oil over medium heat. Add the chopped onion and garlic, sauté until softened and translucent, about 5 minutes.
  3. Add the diced tomato, rice, black pepper, salt, and ground cinnamon (if using) to the saucepan. Stir well and cook for another 2 minutes.
  4. Pour in the vegetable broth and bring to a boil. Once boiling, reduce the heat to low, cover, and let it simmer for about 15 minutes until the rice is cooked and the liquid is absorbed.
  5. While the rice is cooking, prepare the bell peppers by cutting off the tops and removing the seeds. Drizzle the insides with a bit of olive oil and a sprinkle of salt.
  6. Once the rice has finished cooking, remove it from heat and stir in the fresh parsley, dill, lemon juice, and pine nuts (if using). Allow the mixture to cool slightly.
  7. Stuff the bell peppers with the rice mixture, packing it gently but firmly.
  8. Place the stuffed peppers upright in a baking dish. Drizzle with the remaining olive oil and cover the dish with aluminum foil.
  9. Bake in the preheated oven for 25-30 minutes, or until the peppers are tender.
  10. Serve warm, garnished with extra chopped herbs if desired.
