Ingredients
- Long-grain rice - 100 grams
- Water - 250 milliliters
- Onion - 1 medium, finely chopped
- Garlic - 2 cloves, minced
- Fresh parsley - 20 grams, chopped
- Fresh dill - 10 grams, chopped
- Red bell pepper - 1 small, finely diced
- Cumin powder - 1 teaspoon
- Paprika - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Flour - 2 tablespoons
- Olive oil - for frying
Steps
- Rinse the rice under cold water until the water runs clear. In a pot, combine the rice and water, bring to a boil, then reduce heat to low, cover, and simmer for about 15 minutes or until the rice is cooked and the water has been absorbed. Let it cool.
- In a skillet, heat 1 tablespoon of olive oil over medium heat. Add the chopped onion and garlic, sautéing until translucent, about 5 minutes. Then add the diced red bell pepper and cook for another 3 minutes.
- In a large bowl, combine the cooked rice, sautéed onion, garlic, and bell pepper mixture, chopped parsley, dill, cumin, paprika, salt, and black pepper. Mix well until all ingredients are incorporated.
- Add flour to the mixture gradually until the mixture holds together when formed into patties. Adjust the amount of flour as needed.
- Shape the mixture into small patties, about 5 cm in diameter.
- Heat a skillet over medium heat and add enough olive oil to cover the bottom. Fry the patties for about 4-5 minutes on each side or until they are golden brown and crispy.
- Remove the patties from the skillet and drain on paper towels. Serve warm with a side salad or yogurt dip.
