- Long-grain rice - 150 grams
- Water - 300 ml
- Olive oil - 2 tablespoons
- Onion - 1 medium, finely chopped
- Garlic - 2 cloves, minced
- Carrot - 1 medium, diced
- Tomatoes - 2 medium, peeled and diced
- Canned white beans (such as cannellini) - 400 grams, drained and rinsed
- Tomato paste - 1 tablespoon
- Paprika - 1 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Bay leaf - 1
- Fresh parsley - for garnish
Steps
- Rinse the rice under cold water until the water runs clear, then soak it in warm water for 15 minutes.
- In a medium saucepan, heat 1 tablespoon of olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
- Add the minced garlic and diced carrot to the onion, cooking for an additional 3-4 minutes until the carrot begins to soften.
- Stir in the diced tomatoes and cook for another 5 minutes until the mixture is fragrant and slightly thickened.
- Add the drained white beans, tomato paste, paprika, salt, black pepper, and bay leaf to the saucepan. Mix well and let it simmer for about 10 minutes on low heat.
- While the bean mixture simmers, drain the soaked rice. In a separate pot, heat the remaining tablespoon of olive oil over medium heat, then add the rice and toast it for 2-3 minutes until slightly golden.
- Pour in the water, bring to a boil, then reduce to low heat, cover, and cook for about 15 minutes or until the rice is tender and the water is absorbed.
- Remove the bay leaf from the bean mixture and serve the rice on plates topped with the stewed beans. Garnish with fresh parsley.
