Ingredients
- Basmati rice - 150 grams
- Water - 300 milliliters
- Olive oil - 2 tablespoons
- Onion - 1 medium, finely chopped
- Garlic - 2 cloves, minced
- Carrot - 1 medium, diced
- Red bell pepper - 1 medium, diced
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Dried thyme - 1/2 teaspoon
- Döner meat (beef or chicken) - 200 grams, cooked and sliced
- Fresh parsley - 2 tablespoons, chopped
- Lemon - 1, cut into wedges
Steps
- Rinse the basmati rice under cold water until the water runs clear, then soak it in warm water for 15 minutes.
- In a medium saucepan, heat 1 tablespoon of olive oil over medium heat. Add the chopped onion and minced garlic, and sauté until the onion becomes translucent.
- Add the diced carrot and red bell pepper, cooking for an additional 5 minutes until they soften.
- Drain the soaked rice and add it to the saucepan, stirring to combine with the vegetables. Add salt, black pepper, dried thyme, and water, then bring to a boil.
- Reduce the heat to low, cover the saucepan, and simmer the rice for about 15 minutes or until the rice is tender and the water is absorbed.
- While the rice is cooking, heat the remaining tablespoon of olive oil in a separate pan over medium heat. Add the sliced döner meat and cook until heated through and slightly crispy, about 5-7 minutes.
- Once the rice is done, fluff it with a fork and plate it as a base for the döner meat.
- Top the rice with the cooked döner, garnish with fresh parsley, and serve with lemon wedges on the side.
