Ingredients

  • Basmati rice - 150 grams
  • Water - 300 milliliters
  • Olive oil - 2 tablespoons
  • Onion - 1 medium, finely chopped
  • Garlic - 2 cloves, minced
  • Carrot - 1 medium, diced
  • Red bell pepper - 1 medium, diced
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Dried thyme - 1/2 teaspoon
  • Döner meat (beef or chicken) - 200 grams, cooked and sliced
  • Fresh parsley - 2 tablespoons, chopped
  • Lemon - 1, cut into wedges

Steps

  1. Rinse the basmati rice under cold water until the water runs clear, then soak it in warm water for 15 minutes.
  2. In a medium saucepan, heat 1 tablespoon of olive oil over medium heat. Add the chopped onion and minced garlic, and sauté until the onion becomes translucent.
  3. Add the diced carrot and red bell pepper, cooking for an additional 5 minutes until they soften.
  4. Drain the soaked rice and add it to the saucepan, stirring to combine with the vegetables. Add salt, black pepper, dried thyme, and water, then bring to a boil.
  5. Reduce the heat to low, cover the saucepan, and simmer the rice for about 15 minutes or until the rice is tender and the water is absorbed.
  6. While the rice is cooking, heat the remaining tablespoon of olive oil in a separate pan over medium heat. Add the sliced döner meat and cook until heated through and slightly crispy, about 5-7 minutes.
  7. Once the rice is done, fluff it with a fork and plate it as a base for the döner meat.
  8. Top the rice with the cooked döner, garnish with fresh parsley, and serve with lemon wedges on the side.
