  • Cauliflower - 400 grams (1 medium head, grated into rice-like texture)
  • Ground beef or lamb - 200 grams
  • Onion - 1 medium, finely chopped
  • Garlic - 2 cloves, minced
  • Almonds - 30 grams, chopped
  • Pine nuts - 20 grams
  • Dried currants - 20 grams (optional for slight sweetness)
  • Olive oil - 2 tablespoons
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Cinnamon - 1/4 teaspoon
  • Allspice - 1/4 teaspoon
  • Fresh parsley - 2 tablespoons, chopped

Steps

  1. Heat olive oil in a large skillet over medium heat.
  2. Add the chopped onion and minced garlic, sautéing until translucent.
  3. Stir in the ground beef or lamb, cooking until browned and fully cooked.
  4. Add the chopped almonds, pine nuts, dried currants (if using), salt, black pepper, cinnamon, and allspice. Cook for another 2-3 minutes to toast the nuts and blend the flavors.
  5. Mix in the grated cauliflower and stir well to combine. Cook for about 5-7 minutes until the cauliflower is tender but not mushy.
  6. Remove from heat and stir in the chopped parsley before serving.
