- Basmati rice - 150 grams
- Water - 300 milliliters
- Olive oil - 2 tablespoons
- Onion - 1 small, finely chopped
- Garlic - 2 cloves, minced
- Carrot - 1 medium, diced
- Green bell pepper - 1 small, diced
- Tomato - 1 medium, diced
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Paprika - 1/2 teaspoon
- Fresh parsley - 2 tablespoons, chopped
Steps
- Rinse the basmati rice under cold water until the water runs clear, then soak it in water for 20 minutes.
- In a medium saucepan, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 3-4 minutes.
- Stir in the minced garlic and diced carrot, cooking for another 2 minutes until fragrant.
- Add the diced green bell pepper and tomato, stirring for another 3 minutes until the vegetables soften.
- Drain the soaked rice and add it to the saucepan, stirring well to combine with the vegetables.
- Pour in the 300 milliliters of water, add salt, black pepper, and paprika. Bring to a boil, then reduce the heat to low, cover with a lid, and let it simmer for 15-20 minutes until the rice is tender and the water is absorbed.
- Once cooked, remove from heat and let it sit covered for an additional 5 minutes. Fluff the rice with a fork and stir in the chopped parsley before serving.
