Ingredients

  • Basmati rice - 150 grams
  • Water - 300 milliliters
  • Olive oil - 2 tablespoons
  • Onion - 1 small, finely chopped
  • Garlic - 2 cloves, minced
  • Carrot - 1 medium, diced
  • Green bell pepper - 1 small, diced
  • Tomato - 1 medium, diced
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Paprika - 1/2 teaspoon
  • Fresh parsley - 2 tablespoons, chopped

Steps

  1. Rinse the basmati rice under cold water until the water runs clear, then soak it in water for 20 minutes.
  2. In a medium saucepan, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 3-4 minutes.
  3. Stir in the minced garlic and diced carrot, cooking for another 2 minutes until fragrant.
  4. Add the diced green bell pepper and tomato, stirring for another 3 minutes until the vegetables soften.
  5. Drain the soaked rice and add it to the saucepan, stirring well to combine with the vegetables.
  6. Pour in the 300 milliliters of water, add salt, black pepper, and paprika. Bring to a boil, then reduce the heat to low, cover with a lid, and let it simmer for 15-20 minutes until the rice is tender and the water is absorbed.
  7. Once cooked, remove from heat and let it sit covered for an additional 5 minutes. Fluff the rice with a fork and stir in the chopped parsley before serving.
