Ingredients

  • All-purpose flour - 250 grams
  • Warm water - 150 ml
  • Active dry yeast - 7 grams
  • Olive oil - 2 tablespoons
  • Salt - 1 teaspoon
  • Bell pepper (mixed colors) - 100 grams, diced
  • Zucchini - 100 grams, diced
  • Red onion - 50 grams, finely chopped
  • Spinach - 50 grams, chopped
  • Tomato - 50 grams, diced
  • Cumin - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Paprika - 1 teaspoon
  • Fresh parsley - 2 tablespoons, chopped

Steps

  1. In a small bowl, mix warm water with active dry yeast and let it sit for about 5 minutes until frothy.
  2. In a large bowl, combine all-purpose flour and salt. Make a well in the center and add the yeast mixture and olive oil.
  3. Knead the dough for about 10 minutes until smooth and elastic. Cover with a damp cloth and let it rise in a warm place for 30 minutes or until doubled in size.
  4. While the dough is rising, prepare the vegetable filling by heating a pan over medium heat. Add a splash of olive oil, then sauté red onion until translucent.
  5. Add diced bell pepper, zucchini, and chopped spinach to the pan, cooking until the vegetables are tender. Stir in diced tomato, cumin, black pepper, and paprika, and cook for an additional 5 minutes. Remove from heat and let cool slightly.
  6. Preheat the oven to 220 degrees Celsius (428 degrees Fahrenheit).
  7. Once the dough has risen, punch it down and divide it into two equal portions. Roll each portion into an oval shape on a floured surface, about 1 cm thick.
  8. Place the rolled dough on a parchment-lined baking sheet. Spoon the vegetable filling down the center of each oval, leaving space around the edges.
  9. Fold the edges of the dough over the filling, pinching to create a boat shape, and brush the tops with olive oil.
  10. Bake in the preheated oven for 15-20 minutes or until the crust is golden brown. Remove from the oven and sprinkle with fresh parsley before serving.
