Ingredients

  • All-purpose flour - 200 grams
  • Water - 100 ml, warm
  • Olive oil - 1 tablespoon
  • Active dry yeast - 5 grams
  • Sugar - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Fresh spinach - 150 grams, chopped
  • Onion - 1 small, finely chopped
  • Feta cheese - 100 grams, crumbled
  • Black pepper - 1/2 teaspoon
  • Paprika - 1/2 teaspoon
  • Egg - 1 (for egg wash)

Steps

  1. In a small bowl, combine warm water, sugar, and yeast. Let it sit for 5-10 minutes until frothy.
  2. In a large mixing bowl, combine flour and salt. Add the yeast mixture and olive oil, mixing until a dough forms.
  3. Knead the dough on a floured surface for about 5-7 minutes until smooth. Place it in a greased bowl, cover, and let it rise for 30 minutes in a warm place.
  4. While the dough is rising, heat a pan over medium heat and sauté the chopped onion until translucent. Add the spinach and cook until wilted. Remove from heat and let cool.
  5. In a bowl, mix the cooled spinach and onion with crumbled feta cheese, black pepper, and paprika.
  6. Preheat the oven to 220°C (428°F).
  7. Once the dough has risen, punch it down and divide it into two equal pieces. Roll each piece into an oval shape on a floured surface.
  8. Place the spinach mixture along the center of each oval, leaving the edges clear. Fold the sides of the dough over the filling to create a boat shape and pinch the ends to seal.
  9. Brush the tops of the pide with beaten egg for a golden finish.
  10. Bake in the preheated oven for 15-20 minutes until the crust is golden brown. Remove from the oven and let cool for a few minutes before serving.
