Ingredients

  • All-purpose flour - 250 grams
  • Warm water - 150 ml
  • Active dry yeast - 7 grams
  • Olive oil - 2 tablespoons
  • Salt - 1 teaspoon
  • Mushrooms (button or cremini) - 200 grams, sliced
  • Onion - 1 small, finely chopped
  • Garlic - 2 cloves, minced
  • Fresh parsley - 2 tablespoons, chopped
  • Black pepper - to taste
  • Paprika - 1 teaspoon
  • Lemon juice - 1 tablespoon

Steps

  1. In a bowl, combine warm water and yeast. Let it sit for about 5 minutes until frothy.
  2. In a large mixing bowl, combine the flour and salt. Make a well in the center and add the yeast mixture and olive oil.
  3. Mix until a dough forms, then knead for about 5-7 minutes until smooth. Cover and let it rise in a warm place for 30 minutes.
  4. While the dough is rising, heat a skillet over medium heat. Add a splash of olive oil and sauté the onions until translucent.
  5. Add the garlic and mushrooms to the skillet, cooking until the mushrooms are tender and any liquid has evaporated. Season with black pepper, paprika, and stir in the lemon juice and parsley. Remove from heat.
  6. Preheat your oven to 220°C (428°F).
  7. Once the dough has risen, punch it down and divide it into two equal portions. Roll each portion into an oval shape on a floured surface.
  8. Transfer the rolled dough to a baking sheet lined with parchment paper. Spoon the mushroom mixture onto the center of each oval, leaving a border around the edges.
  9. Fold the edges of the dough over the filling, pinching to secure, and create a boat shape.
  10. Bake in the preheated oven for 15-20 minutes, or until the crust is golden brown.
  11. Remove from the oven, let cool slightly, and serve warm.
