Ingredients

  • All-purpose flour - 250 grams
  • Warm water - 150 ml
  • Yeast - 7 grams
  • Sugar - 5 grams
  • Salt - 5 grams
  • Olive oil - 15 ml
  • Minced beef or lamb - 200 grams
  • Onion - 1 medium, finely chopped
  • Garlic - 2 cloves, minced
  • Tomato - 1 medium, finely chopped
  • Red bell pepper - 1 small, finely chopped
  • Parsley - 2 tablespoons, chopped
  • Cumin - 1 teaspoon
  • Paprika - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Egg - 1, beaten (for egg wash)

Steps

  1. In a bowl, mix warm water, sugar, and yeast. Let it sit for 5-10 minutes until frothy.
  2. In a large mixing bowl, combine flour and salt. Pour in the yeast mixture and olive oil, and knead until a smooth dough forms. Cover and let rise for 30 minutes.
  3. In a skillet over medium heat, sauté the onion and garlic until translucent. Add minced meat and cook until browned.
  4. Stir in chopped tomato, red bell pepper, cumin, paprika, black pepper, and parsley. Cook for another 5 minutes until the vegetables are soft. Set aside to cool.
  5. Preheat the oven to 220°C (428°F).
  6. Divide the dough into two equal portions. Roll each portion into an oval shape on a floured surface.
  7. Place the rolled dough on a baking sheet lined with parchment paper. Spread the meat mixture evenly on each oval, leaving a border around the edges.
  8. Fold the edges of the dough inward to create a boat shape. Brush the edges with the beaten egg.
  9. Bake in the preheated oven for 15-20 minutes or until the crust is golden brown.
  10. Remove from the oven, let cool slightly, and serve warm.
