  • All-purpose flour - 200 grams
  • Water - 100 ml
  • Active dry yeast - 5 grams
  • Sugar - 5 grams
  • Salt - 5 grams
  • Olive oil - 15 ml
  • Eggs - 2 large
  • Feta cheese - 75 grams, crumbled
  • Fresh parsley - 10 grams, chopped
  • Black pepper - 1 gram
  • Paprika - 1 gram

Steps

  1. In a small bowl, combine warm water, sugar, and active dry yeast. Let it sit for about 5 minutes until frothy.
  2. In a large mixing bowl, combine all-purpose flour and salt. Make a well in the center and add the yeast mixture and olive oil.
  3. Mix the ingredients until a dough forms, then knead for about 5-7 minutes until smooth and elastic.
  4. Cover the dough with a damp cloth and let it rise in a warm place for 20 minutes or until it doubles in size.
  5. Preheat the oven to 220°C (428°F).
  6. Once the dough has risen, punch it down and divide it into two equal portions. Roll each portion into an oval shape on a lightly floured surface.
  7. Place the rolled dough onto a baking sheet lined with parchment paper.
  8. In a bowl, mix the crumbled feta cheese, chopped parsley, black pepper, and paprika. Spoon the mixture along the edges of the dough, leaving space in the center for the eggs.
  9. Crack an egg into the center of each pide carefully.
  10. Bake in the preheated oven for 15-20 minutes, or until the edges are golden and the eggs are set to your liking.
  11. Remove from the oven, allow to cool slightly, and serve warm.
