- All-purpose flour - 200 grams
- Water - 100 ml
- Active dry yeast - 5 grams
- Sugar - 5 grams
- Salt - 5 grams
- Olive oil - 15 ml
- Eggs - 2 large
- Feta cheese - 75 grams, crumbled
- Fresh parsley - 10 grams, chopped
- Black pepper - 1 gram
- Paprika - 1 gram
Steps
- In a small bowl, combine warm water, sugar, and active dry yeast. Let it sit for about 5 minutes until frothy.
- In a large mixing bowl, combine all-purpose flour and salt. Make a well in the center and add the yeast mixture and olive oil.
- Mix the ingredients until a dough forms, then knead for about 5-7 minutes until smooth and elastic.
- Cover the dough with a damp cloth and let it rise in a warm place for 20 minutes or until it doubles in size.
- Preheat the oven to 220°C (428°F).
- Once the dough has risen, punch it down and divide it into two equal portions. Roll each portion into an oval shape on a lightly floured surface.
- Place the rolled dough onto a baking sheet lined with parchment paper.
- In a bowl, mix the crumbled feta cheese, chopped parsley, black pepper, and paprika. Spoon the mixture along the edges of the dough, leaving space in the center for the eggs.
- Crack an egg into the center of each pide carefully.
- Bake in the preheated oven for 15-20 minutes, or until the edges are golden and the eggs are set to your liking.
- Remove from the oven, allow to cool slightly, and serve warm.
