Ingredients

  • All-purpose flour - 250 grams
  • Warm water - 150 ml
  • Active dry yeast - 5 grams
  • Salt - 5 grams
  • Sugar - 5 grams
  • Olive oil - 15 ml
  • Feta cheese - 100 grams, crumbled
  • Mozzarella cheese - 100 grams, shredded
  • Black pepper - 1 gram
  • Fresh parsley - 10 grams, chopped

Steps

  1. In a bowl, combine warm water, sugar, and yeast. Let it sit for about 10 minutes until frothy.
  2. In a large mixing bowl, combine all-purpose flour and salt. Make a well in the center and add the yeast mixture and olive oil.
  3. Knead the dough on a floured surface for about 5-7 minutes until smooth. Place the dough in a greased bowl, cover, and let it rise for 30 minutes in a warm place.
  4. Preheat the oven to 220°C (428°F).
  5. Once the dough has risen, punch it down and divide it into two equal portions. Roll each portion into an oval shape, about 1 cm thick.
  6. In a bowl, mix the crumbled feta cheese, shredded mozzarella, black pepper, and chopped parsley.
  7. Place the cheese mixture along the edges of the dough, leaving the center clear, then fold the edges over to create a boat shape, pinching the ends to seal.
  8. Transfer the pide to a baking sheet lined with parchment paper and bake for 15-20 minutes, or until golden brown.
  9. Remove from the oven, let cool slightly, then slice and serve warm.
