- All-purpose flour - 250 grams
- Warm water - 150 ml
- Active dry yeast - 5 grams
- Salt - 5 grams
- Sugar - 5 grams
- Olive oil - 15 ml
- Feta cheese - 100 grams, crumbled
- Mozzarella cheese - 100 grams, shredded
- Black pepper - 1 gram
- Fresh parsley - 10 grams, chopped
Steps
- In a bowl, combine warm water, sugar, and yeast. Let it sit for about 10 minutes until frothy.
- In a large mixing bowl, combine all-purpose flour and salt. Make a well in the center and add the yeast mixture and olive oil.
- Knead the dough on a floured surface for about 5-7 minutes until smooth. Place the dough in a greased bowl, cover, and let it rise for 30 minutes in a warm place.
- Preheat the oven to 220°C (428°F).
- Once the dough has risen, punch it down and divide it into two equal portions. Roll each portion into an oval shape, about 1 cm thick.
- In a bowl, mix the crumbled feta cheese, shredded mozzarella, black pepper, and chopped parsley.
- Place the cheese mixture along the edges of the dough, leaving the center clear, then fold the edges over to create a boat shape, pinching the ends to seal.
- Transfer the pide to a baking sheet lined with parchment paper and bake for 15-20 minutes, or until golden brown.
- Remove from the oven, let cool slightly, then slice and serve warm.
