Ingredients

  • All-purpose flour - 200 grams
  • Warm water - 100 milliliters
  • Active dry yeast - 5 grams
  • Olive oil - 1 tablespoon
  • Salt - 1/2 teaspoon
  • Red bell pepper - 1 medium, diced
  • Zucchini - 1 small, diced
  • Mushrooms - 100 grams, diced
  • Onion - 1 small, finely chopped
  • Garlic - 2 cloves, minced
  • Tomato paste - 1 tablespoon
  • Paprika - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Fresh parsley - 2 tablespoons, chopped
  • Lemon juice - 1 tablespoon

Steps

  1. In a small bowl, combine warm water and yeast. Let it sit for 5 minutes until frothy.
  2. In a large bowl, mix flour and salt. Make a well in the center and add the yeast mixture and olive oil. Knead until a smooth dough forms, about 5-7 minutes.
  3. Cover the dough with a damp cloth and let it rise in a warm place for about 30 minutes, or until doubled in size.
  4. In the meantime, heat a pan over medium heat and add a splash of olive oil. Sauté the onion and garlic until translucent, about 3-4 minutes.
  5. Add the diced red bell pepper, zucchini, and mushrooms to the pan. Cook for 5-7 minutes until softened.
  6. Stir in the tomato paste, paprika, black pepper, and fresh parsley. Cook for another 2-3 minutes, then remove from heat and add lemon juice. Let the mixture cool slightly.
  7. Preheat your oven to 220°C (428°F).
  8. Once the dough has risen, divide it into two equal pieces. Roll each piece into an oval shape on a floured surface.
  9. Place the dough on a baking sheet lined with parchment paper. Spoon the vegetable mixture onto the center of each oval, leaving space around the edges.
  10. Fold the edges of the dough over the filling, pinching to seal, creating a boat shape.
  11. Bake in the preheated oven for 15-20 minutes, or until the edges are golden brown.
  12. Remove from the oven and let it cool slightly before serving.
