Ingredients
- All-purpose flour - 200 grams
- Warm water - 100 milliliters
- Active dry yeast - 5 grams
- Olive oil - 1 tablespoon
- Salt - 1/2 teaspoon
- Red bell pepper - 1 medium, diced
- Zucchini - 1 small, diced
- Mushrooms - 100 grams, diced
- Onion - 1 small, finely chopped
- Garlic - 2 cloves, minced
- Tomato paste - 1 tablespoon
- Paprika - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Fresh parsley - 2 tablespoons, chopped
- Lemon juice - 1 tablespoon
Steps
- In a small bowl, combine warm water and yeast. Let it sit for 5 minutes until frothy.
- In a large bowl, mix flour and salt. Make a well in the center and add the yeast mixture and olive oil. Knead until a smooth dough forms, about 5-7 minutes.
- Cover the dough with a damp cloth and let it rise in a warm place for about 30 minutes, or until doubled in size.
- In the meantime, heat a pan over medium heat and add a splash of olive oil. Sauté the onion and garlic until translucent, about 3-4 minutes.
- Add the diced red bell pepper, zucchini, and mushrooms to the pan. Cook for 5-7 minutes until softened.
- Stir in the tomato paste, paprika, black pepper, and fresh parsley. Cook for another 2-3 minutes, then remove from heat and add lemon juice. Let the mixture cool slightly.
- Preheat your oven to 220°C (428°F).
- Once the dough has risen, divide it into two equal pieces. Roll each piece into an oval shape on a floured surface.
- Place the dough on a baking sheet lined with parchment paper. Spoon the vegetable mixture onto the center of each oval, leaving space around the edges.
- Fold the edges of the dough over the filling, pinching to seal, creating a boat shape.
- Bake in the preheated oven for 15-20 minutes, or until the edges are golden brown.
- Remove from the oven and let it cool slightly before serving.
