Ingredients
- Gluten-free all-purpose flour - 200 grams
- Warm water - 120 ml
- Active dry yeast - 7 grams
- Olive oil - 2 tablespoons
- Salt - 1 teaspoon
- Ground beef - 150 grams
- Onion - 1 small, finely chopped
- Green bell pepper - 1 small, finely chopped
- Tomato - 1 small, diced
- Garlic - 1 clove, minced
- Paprika - 1 teaspoon
- Cumin - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Fresh parsley - 2 tablespoons, chopped
- Egg - 1, beaten (for egg wash)
Steps
- In a bowl, combine warm water and yeast. Let it sit for about 5 minutes until frothy.
- In a large mixing bowl, combine gluten-free flour and salt. Add the yeast mixture and olive oil. Mix until a dough forms.
- Knead the dough on a floured surface for about 5 minutes until smooth. Cover with a damp cloth and let it rise for 30 minutes.
- In a skillet, heat a little olive oil over medium heat. Add chopped onion and garlic, sautéing until translucent.
- Add ground beef, green bell pepper, diced tomato, paprika, cumin, and black pepper to the skillet. Cook until the meat is browned and the vegetables are tender. Stir in chopped parsley and set aside to cool.
- Preheat the oven to 220°C (428°F).
- Divide the risen dough into two equal portions. Roll each portion into an oval shape on a gluten-free floured surface.
- Place the dough on a baking sheet lined with parchment paper. Spoon the meat mixture along the center of each dough oval, leaving the edges clear.
- Fold the edges of the dough over the filling, pinching to create a boat shape.
- Brush the edges of the dough with the beaten egg for a golden finish.
- Bake in the preheated oven for 15-20 minutes, or until the dough is golden and cooked through.
- Remove from the oven and let cool slightly before serving. Enjoy your gluten-free pide!
