Pide Burger

Ingredients
- Pide bread - 2 pieces
- Chickpeas - 200 grams, cooked
- Red bell pepper - 1, diced
- Red onion - 1 small, finely chopped
- Garlic - 2 cloves, minced
- Cumin - 1 teaspoon
- Paprika - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Olive oil - 2 tablespoons
- Spinach - 100 grams, fresh
- Feta cheese - 100 grams, crumbled (optional)
- Yogurt - 100 grams
- Lemon juice - 1 tablespoon
- Fresh parsley - 2 tablespoons, chopped
Steps
- In a skillet, heat olive oil over medium heat. Add the chopped red onion and garlic, sautéing until translucent.
- Stir in the diced red bell pepper, cooked chickpeas, cumin, paprika, salt, and black pepper. Cook for about 5-7 minutes until the vegetables are tender.
- Add the fresh spinach to the skillet and cook until wilted, about 2 minutes. Remove from heat and let cool slightly.
- Preheat the oven to 180°C (350°F).
- While the filling cools, mix yogurt and lemon juice in a small bowl and set aside.
- Once the chickpea mixture has cooled, place half of it on each piece of pide bread, spreading it evenly.
- If using, sprinkle crumbled feta cheese over the filling.
- Bake the pide burgers in the preheated oven for about 10-12 minutes until the bread is crispy.
- Remove from the oven, and drizzle the yogurt sauce over the top. Garnish with fresh parsley.
- Serve warm and enjoy your unique Pide Burger!
