Pide Burger

Ingredients

  • Pide bread - 2 pieces
  • Chickpeas - 200 grams, cooked
  • Red bell pepper - 1, diced
  • Red onion - 1 small, finely chopped
  • Garlic - 2 cloves, minced
  • Cumin - 1 teaspoon
  • Paprika - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Olive oil - 2 tablespoons
  • Spinach - 100 grams, fresh
  • Feta cheese - 100 grams, crumbled (optional)
  • Yogurt - 100 grams
  • Lemon juice - 1 tablespoon
  • Fresh parsley - 2 tablespoons, chopped

Steps

  1. In a skillet, heat olive oil over medium heat. Add the chopped red onion and garlic, sautéing until translucent.
  2. Stir in the diced red bell pepper, cooked chickpeas, cumin, paprika, salt, and black pepper. Cook for about 5-7 minutes until the vegetables are tender.
  3. Add the fresh spinach to the skillet and cook until wilted, about 2 minutes. Remove from heat and let cool slightly.
  4. Preheat the oven to 180°C (350°F).
  5. While the filling cools, mix yogurt and lemon juice in a small bowl and set aside.
  6. Once the chickpea mixture has cooled, place half of it on each piece of pide bread, spreading it evenly.
  7. If using, sprinkle crumbled feta cheese over the filling.
  8. Bake the pide burgers in the preheated oven for about 10-12 minutes until the bread is crispy.
  9. Remove from the oven, and drizzle the yogurt sauce over the top. Garnish with fresh parsley.
  10. Serve warm and enjoy your unique Pide Burger!
