Pişmaniye

Pişmaniye is a traditional Turkish dessert that features a unique texture, resembling fluffy cotton candy, made from sugar, flour, and butter. Its delicate strands melt in your mouth, offering a sweet and nostalgic taste of Turkish cuisine.

Ingredients

  • Granulated sugar - 200 grams
  • Water - 100 ml
  • All-purpose flour - 50 grams
  • Unsalted butter - 50 grams
  • Vanilla extract - 1 teaspoon
  • Powdered sugar - for dusting

Steps

  1. In a medium saucepan, combine the granulated sugar and water. Heat over medium heat, stirring until the sugar dissolves completely.
  2. Once dissolved, increase the heat and allow the mixture to boil without stirring, until it reaches a soft-ball stage (about 115°C or 240°F).
  3. While the syrup is boiling, in a separate pan, melt the butter over low heat. Add the flour to the melted butter, stirring continuously to create a roux until it turns golden brown.
  4. Once the sugar syrup reaches the correct temperature, remove it from the heat and add the vanilla extract to the syrup.
  5. Gradually pour the hot syrup into the roux, stirring constantly to combine until fully mixed. Allow the mixture to cool slightly.
  6. Begin pulling and stretching the mixture with greased hands or a spatula until it becomes light and fluffy. This process will create the strands characteristic of Pişmaniye.
  7. Once the mixture has cooled and has a fluffy texture, shape it into thin strands and place them on a dusted surface with powdered sugar to prevent sticking.
  8. Let the strands cool completely before serving. Optionally, dust with more powdered sugar before serving.
