Ingredients

  • Eggs - 4 large
  • Feta cheese - 100 grams, crumbled
  • Olive oil - 2 tablespoons
  • Fresh parsley - 2 tablespoons, chopped
  • Black pepper - to taste
  • Salt - to taste

Steps

  1. In a mixing bowl, crack the 4 large eggs and beat them well with a fork.
  2. Add crumbled feta cheese, chopped parsley, salt, and black pepper to the eggs and mix until combined.
  3. In a non-stick skillet, heat 2 tablespoons of olive oil over medium heat.
  4. Pour the egg mixture into the skillet, tilting the pan gently to spread it evenly.
  5. Cook for about 5-7 minutes, or until the edges start to set. Use a spatula to lift the edges while tilting the pan to allow uncooked eggs to flow to the edges.
  6. When the top is still slightly runny, carefully fold the omelette in half and cook for an additional 2-3 minutes until fully cooked.
  7. Slide the omelette onto a plate and serve warm, garnished with extra parsley if desired.
