Ingredients
- All-purpose flour - 200 grams
- Water - 100 milliliters
- Olive oil - 1 tablespoon
- Salt - 1/2 teaspoon
- Feta cheese - 100 grams, crumbled
- Ricotta cheese - 100 grams
- Fresh parsley - 2 tablespoons, chopped
- Black pepper - 1/4 teaspoon
- Egg - 1, beaten (for egg wash)
Steps
- In a mixing bowl, combine the flour and salt. Gradually add water and olive oil, mixing until a dough forms.
- Knead the dough on a floured surface for about 5 minutes until smooth and elastic. Cover and let it rest for 15 minutes.
- In another bowl, mix the crumbled feta cheese, ricotta cheese, chopped parsley, and black pepper to create the filling.
- Divide the rested dough into 4 equal pieces and roll each piece into a thin circle (about 20 cm in diameter).
- Place a generous amount of the cheese filling on one half of each dough circle, then fold the other half over to create a half-moon shape. Press the edges to seal.
- Heat a non-stick skillet over medium heat. Brush the skillet lightly with olive oil.
- Cook each gözleme for about 4-5 minutes on each side, or until golden brown and crispy. Brush the tops with the beaten egg for a glossy finish if desired.
- Remove from skillet and let cool slightly before serving. Cut into wedges and enjoy!
