Ingredients

  • All-purpose flour - 200 grams
  • Water - 100 milliliters
  • Olive oil - 1 tablespoon
  • Salt - 1/2 teaspoon
  • Feta cheese - 100 grams, crumbled
  • Ricotta cheese - 100 grams
  • Fresh parsley - 2 tablespoons, chopped
  • Black pepper - 1/4 teaspoon
  • Egg - 1, beaten (for egg wash)

Steps

  1. In a mixing bowl, combine the flour and salt. Gradually add water and olive oil, mixing until a dough forms.
  2. Knead the dough on a floured surface for about 5 minutes until smooth and elastic. Cover and let it rest for 15 minutes.
  3. In another bowl, mix the crumbled feta cheese, ricotta cheese, chopped parsley, and black pepper to create the filling.
  4. Divide the rested dough into 4 equal pieces and roll each piece into a thin circle (about 20 cm in diameter).
  5. Place a generous amount of the cheese filling on one half of each dough circle, then fold the other half over to create a half-moon shape. Press the edges to seal.
  6. Heat a non-stick skillet over medium heat. Brush the skillet lightly with olive oil.
  7. Cook each gözleme for about 4-5 minutes on each side, or until golden brown and crispy. Brush the tops with the beaten egg for a glossy finish if desired.
  8. Remove from skillet and let cool slightly before serving. Cut into wedges and enjoy!
